August 9th

So I found all my ideas from Pinterest this week.  Seriously, if you don't Pinterest, you need to.

Here is the plan

Ribs, potato salad and some fruit.  The Super Mercado by my house has ribs on sale for $1.  I love the Super Mercado.  The meat is seasoned really well and so tender.  My daughter is also in dual language so she can practice her Spanish.    Winwin!!
Easy Oven Baby Back Ribs....only 3 ingredients in these! This is by far the easiest recipe I've found for ribs online!

That is it for the week as we eat each meal twice and the PTA is supplying my dinner one night.

August 2nd

Here is my plan for the week.  As always, remember I only cook for two so we eat a lot of leftovers

Tonight, Marlee has a sleepover so I am making these for myself.  Don't they look yummy?


Nothing beats Mexican food and a good Cerveca.  Ole!!


I am also going to make a veggie sandwich.  I plan to toast some rolls, add cream cheese, avacado spread cucumbers and cheese.  Add in some sweet potatoe fries and we've got a meal.  I love veggie sandwiches.  They are really the only sandwiches I crave.

Additionally, we will do chicken tacos and rice.  

And that my friends, is eating on a very small budget.

July 26th

I am struggling for ideas this week.

Tonight, I am doing a meat and cheese plate with some fruit.  We are going to the pool so I want something easy with minimal preparation

Brocolli/chicken rice casserole.  This is my absolute go to dish.  It is yummy, yummy, yummy

When I first made this, Marlee told me it was the best thing I have ever made.

July 18th





Okay, so this is my first official post on my meal planning blog.  This comes with a disclaimer-I am not a chef, I do not make fancy meals and I am on a budget.  If you are looking for steak and lobster, this is not the place.

I like to find recipes and do all the time.  I follow so many blogs and am a professional pinner.  That being said, I do not make a lot of what I see.

Here is my plan for the next week.  Keep in mind, there are only two of us so we eat leftovers

These look yummy and we can eat on this more than one day.  I plan to do so with rice and a salad.

Pizza Burgers



To be honest, I am gonna change the recipe slightly.  I hate tomato soup so intend to use leftover spaghetti sauce and my own seasoning.  I am also foregoing the pepperoni.  Marlee will love this.  I intend to use half the hamburger meat for this and the other half to make good ole burgers.

Lastly, I may do breakfast for dinner.  I intend to make cheese omelettes with biscuits.

See-simple and cheap.
